Merry Christmas from the Poltrack Family (New Hampshire Chapter). It was a festive event with opłateki, food, fireworks, kids, presents, Christmas carols and laughs.
Christmas is a two day affair for our family. We celebrated Christmas eve at my sister’s home. My nephew put on a spectacular fireworks display and we dined on lobster bisque and lasagna.

On Christmas day my mom decided that two small turkeys would be better than one giant one that no one could lift. Four turkey drumsticks are better than two and the bird was cooked thoroughly. I knew there would be leftovers and I knew exactly what I was going to do with our share.
In July of 2018 I purchased a Instant Pot DUO60 6 Qt 7-in-1 Multi-Use Programmable Pressure Cooker. I knew it would only take a few minutes to find a turkey recipe online and I chose a Turkey and Brown Rice Soup recipe from Mel’s Kitchen Cafe. I used spinach instead of Kale and it is very tasty.
